Architectural sculptor, of Cong, Co. Mayo, employed by Sir Benjamin Lee Guinness in the restoration of St Mary's Abbey, Cong, circa 1862-3.(1) According to his obituary in The Nation, Peter Foy, was entrusted by Guinness with 'the restoration of the ornamental work of the old Abbey of Cong, which he executed to his entire satisfaction'. Foy, who was postmaster at Cong in his latter years, died on 30 December 1876 at the age of sixty-five, 'highly respected and a general favourite with all who knew him'.
